Homemade Chipwiches: Guinness Ice Cream and Butter Cookies

These chipwiches were also made for my aforementioned birthday potluck. I spent a lot of time brainstorming the best combination of homemade ice cream / fresh baked cookie. Pumpkin ice cream with molasses cookies? Earl grey ice cream with honey cookies? Endless possibilities. In the end, I kept it kinda simple because I knew these cookies would keep the perfect chewy-not-crumbly texture after being frozen.



Use the cookie recipe above without the chocolate chips. Recipe for Guinness ice cream is as follows:

1 bottle of Guinness Extra Stout
3/4 cup sugar
1/2 tsp salt
2 cups heavy cream
1 tsp vanilla extract
6 egg yolks
a healthy pour of molasses, if you have it

Whisk together sugar, salt & egg yolks in a saucepan until smooth. Stir in cream and molasses, and cook over medium heat, stirring constantly, until the mixture is thick enough to coat the back of a spoon (about 5 minutes). Whisk in Guinness and vanilla, refrigerate until chilled. Process in an ice cream maker and freeze until firm, at least 4 hours.'

Once your ice cream is done and your cookies are cooled, assemble your ice cream sandwiches (quickly!) and re-freeze them. This recipe makes a lot of chipwiches (20-25?) but I had no problem getting rid of them.

  2. shhh. it may or may not have been trash day. that's how it works here, you can only take out your trash on certain days!
