Long overdue stew post
I can't believe I forgot to post this! A while back, when I was sick, Tom (dapper spatula-wielding fellow one post down) made me some chicken soup... it's a little bit silly to post this now that it's summertime in NY, but luckily, I was skeptically eying him the whole time (sorry, Tom) so hopefully I can remember what went into it.
First in the pot was the thick cut pork belly (i ALWAYS remember pork belly)
Then, in the fat, goes very loosely chopped onions, apples and cabbage in big slices, cooked until soft. Then some chicken stock and seasoning, left to simmer.
While it's simmering, rub a couple chicken legs with salt and pepper and sear on both sides until crispy. Then throw 'em in the pot with a bottle of your favorite stout. Cover and let simmer, stirring and seasoning to taste, until the chicken has absorbed all of that lovely flavor and is absolutely fall-off-the-bone amazing.
And of course, remember to add LOTS of hot pepper.
