Breakfast befitting of the unshowered.
My hat is off to you multi-childrened folk.
Especially those of you who have young ones and manage to cook dinner every night! We do a lot of "making" not necessarily COOKING. Like, sprinkle some rub on salmon and bake, boil some quinoa, unfreeze some peas. Dinner usually consists of a well seasoned protein, carb, and veg. But that's boring for a blog.
And breakfast? A LUXURY. For me, it's coffee COFFEE cOfFeF cofffeeeeeeee! And half a banana and apple (the other half goes to Lucy) and maybe some cereal. Or non-breakfast appropriate leftovers from the night before.
But a few weeks ago, I had a relaxing couple of days in Chatham at my dad's house celebrating my brother's birthday. While the partiers were sleeping off a hangover, Nat, Lucy, my dad, and I went for a walk in the drizzly summer morning for some coffee and breakfast. We stopped by a cafe for what my dad eats every morning for breakfast: a toasted bagel with home made cream cheese and a fresh slice of the ripest fattest organic tomato you've ever laid eyes on. How simple and yet indulgent it is! So here's my every-day home version. And it's so quick and transportable, even I can do this daily.
