Mom's Banana Bread


A simple perfect recipe for my mom's banana bread.  You're welcome, family!

1/2 c unsalted butter (melted)
1 1/2 c sugar
2 eggs (separate yolks and whites)
1 tsp vanilla extract
1/2 c buttermilk
2-3 mashed over ripe bananas
2 c flour
1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt


Preheat oven to 350.  Mix flour, baking powder, baking soda, and salt.  Set aside.  Cream together melted butter, sugar, egg yolks, and vanilla.  Add buttermilk and bananas, then fold in beaten egg whites.  Mix flour mixture into wet mixture in batches.  Pour into greased bread pans or muffin tins.  Bake for 35-45 minutes (45 for bread, 30-35 for muffins).

Let cool and then DEVOUR.  If they last until the next morning, they're excellent reheated by grilling for a minute in a skillet with a little butter.
