Spiralized Squash with Pork & Caramelized Onions

Six year post break broken!  Let's get back to this, shall we?

I'm late to the spiralized veggie game, but came across some butternut squash when feeling in the mood for something healthier than pasta. Goal: use healthy-ish channel for significant fat and salt.  Achieved!  



Ingredients

Spiralized butternut squash
Garlic 
Mixed greens
Sweet red peppers
Ground pork
Spanish onions
2+eggs (optional!)
Salt / Pepper
Olive oil

Saute the pork until brown and fully cooked in a little bit of olive oil.  I used sweet Italian sausage, so no need to add any spice. Remove from pan with slotted spoon, set aside.

Slice and caramelize onions in the pork fat (!) until they're brown.  Taking them off too soon (just sweating versus truly caramelizing) will not give that sweetness.

Then, saute the spiralized squash in a pan with salt, pepper, garlic, and olive oil.  Just a few minutes until they're fully warmed and softened just a little, but not mushy. Throw in the greens and sliced sweet peppers to your liking and warm, but don't cook down. They should warm, but maintain their shape and bite, so don't cook down too much!  The 'rawness' is so good with the very cooked down pork & onions.

Toss the cooked veggies onto a large platter and top with caramelized onions and pork mixture.  We added a few fried eggs, which I wouldn't skip.
