brunch casserole
I am not a morning person. And I am definitely not a morning cook. Don't get me wrong-- I really love breakfast foods! That is, when they show up at 1 pm and somebody else has cooked them for me. But because my boyfriend and two roommates are so exceedingly awesome, I decided to cook them a lazy man's brunch this past Sunday.
Here's the cliff notes recipe:
CUT UP FOOD, THROW IN DISH, COVER WITH CHEESE. EAT.

Ingredients -
1 bag fresh spinach
1 onion, diced
1 package of breakfast links
Cheese of your choosing**
1 baguette, cubed (the crustier, the better)
8-9 eggs
Milk
Seasonings
Cook sausage first, remove from pan and slice. Add onion to sausage fat and sautee until soft. Gradually add the spinach (you won't be able to fit it all in the pan at once) until it's wilty. Generously add salt, pepper and hot pepper (if you're me). Mix sausage into the onion and spinach mix and set aside.
If it hadn't been morning, I would have had the bread cubes crisping in the oven while preheating... but whatever, it doesn't make THAT much of a difference. So, mix your bread cubes (pre-crisped or not) with the sausage/onion/spinach mix and a whole lotta cheese. Stuff this into your casserole dish and pour the eggs (whisked with milk) on top of it. Cover it with an extra layer of cheese, you know, for good luck. Then bake at 350 until the top is nice and crispy brown. This took me about 1 hour. Just enough time to drink a pot of coffee.
** I just mixed together the random types of cheese hanging around in my fridge. Parmesan, mozzarella and gruyere. It's all good.
