Easy Sunday Side Dish
This is one of my favorite easy side dishes to make. It's delicious and essentially only has four ingredients:
1 package brussels sprouts, 2 red potatoes, 1 onion and (my favorite ingredient): bacon! Salt and pepper too, of course, but they don't really count.
First, you want to cut the ends off the brussels sprouts and dice the potatoes (skin on, of course). Boil them together until tender but not overcooked, about 8 minutes. Drain and loosely chop brussels sprouts.
Cut your bacon into small pieces and cook, then remove. Cook the diced onion in the bacon grease until caramelized. Add the brussels sprouts, potatoes and bacon, season generously with salt and pepper, and sautee a few minutes, stirring.
