brunch-tastic side dishes!

I hosted brunch today and needed some dishes to accompany my oh-so-easy frittata ... I already had a theme going, so why not stick with "oh-so-easy"?

First up is a panzanella: fancy word for a simple bread salad.

This is a mix of fresh basil, baby spinach, tomatoes chopped into large chunks, red onion and lots of roughly cut, lightly toasted baguette. After this picture was taken, I tossed the panzanella in a mix of olive oil and red wine vinegar.

Next up: a sweet and savory skewer


Peaches quickly sauteed, then tossed with mozzarella pearls and fresh basil in olive oil/balsamic vinegar, salt and pepper, then skewered!
(Next time I make this, I'm waiting until the end to put the basil on instead of mixing it with the peaches and mozz. It got soggy.)

  2. it all disappeared immediately after these pics were taken. you should make the panzanella! i want to make it every day... So easy and amazing
