we marinated it overnight in whatever you call it when you throw lemon zest, lemon juice, fresh dill, olive oil, garlic and an onion in a food processor. leg of lamb has a good layer of fat on the outside so when we threw it on the hot grill it charred the outsides (yum) and then we cooked it on a lower heat. didn't cook totally evenly though. still figuring out the charcoal grilling thing.
that looks so good! what did you put on the lamb to make it caramelize?? yumz.
